Regular bacon is cut from a hog's belly. It is sliced and smoke cured with celery salt and water. Canadian bacon is from the loin, and is much leaner than regular bacon. Shoulder bacon is from the shoulder, so is oval in shape and darker in color than regular bacon, although comparable in fat content and flavor. Jowl bacon is made from the meat on a pig's jaws, and is the fattiest bacon of all. Bacon Ends are the leftover after the other cuts of bacon are sliced into uniform strips. They are great for cutting into chunks, sautéing and adding to just about anything.
